Tuna Patties

This recipe makes about 12 good-sized patties (about 120 cals each).
Ingredients.
1 x 425g canned tuna in an olive oil blend. (I don't drain it).
1 cup of grated carrot
2 eggs
3/4 cup of breadcrumbs (I use gluten-free)
1 small red onion (Spanish?)
1 cup of finely chopped spinach
a good handful each of fresh mint & parsley, finely chopped
2 cloves of garlic, crushed or 1 teaspoon of minced garlic.
1 tablespoon of finely chopped mixed seeds (I use hemp, sunflower & pumpkin)
Juice of 1 lemon or lime (could also add some zest if you like. I will next time)
8-10 capers (optional of course. I love them!)
2 tablespoons of grated fresh Parmesan cheese.
Freshly ground black pepper to taste (I love lots) & a little salt only as the capers & tuna are quite salty already.
1 tablespoon plain flour (GF for me) to help them stick together.

Method.
I mixed it all up, formed them into medium-sized patties, (which ended up being 12) & then shallow fried them in olive oil until nicely browned.
They are delicious cold, but I have also microwaved them on a plate with cooked veggies.
I squeeze some lemon juice on them as I love it, but these are nice & tasty & quite moist.
